I should be grateful

I should be grateful that Miss G likes my modified tuna burgers but it was a case of "leave some for me, that's Monday and Wednesday's lunch!". As I mentioned in my last post it was time to "just do it" and work out an entire week of meals for the family.

As I like to fly by the seat of my pants with most meals - probably because after all these years, I'm in a cooking rut, it felt like I was chained to the computer as I slaved away on my spreadsheet. Why the organization? My reasons aren't to do with comp prep or anything like that - I am hoping that I spend less on my weekly groceries - my tendency is to run out to the shops at the last minute and pick up dinner stuff as well as other items that "I think we may need" (aka stuff that we DON'T need).

As well as the lamb cutlets I made, I also did a really nice chilli, made a new version of the Paleo Tuna Burgers I blogged about last year as well as create a special something for Shelley and Nicole. Nicole gave me the best 40th presents, some chocolates she had melted into the shape of a male member (she also has boob moulds I am told!). Well, it was great because my husband who can't keep his hands off chocolate, could not come at licking these phallic treats. I think that it's the only chocolate that I've been given that I was able to eat all by myself in my own good time!

Here's the recipe for Tuna Burgers, not quite Paleo, but taste better in my opinion.

One big can of tuna in springwater, thoroughly drained
1/4 cup of linseeds/flax seeds partially ground
dash of teriyaki marinade
one onion in very fine dice (I used food processor)
1 egg
2 tablespoons unprocessed bran
3 tablespoons oats (partially ground)

Mix everything together and compress into egg rings or burger moulds. Cook and slide out of moulds. This lot made 7 decent sized patties.

Guess who's having tuna burgers and a big fat salad tomorrow for lunch???

Good Vibrations


Today I'm as "happy as a pig in mud" - put in a good solid morning trained 5 clients, and then had a very relaxing lunch with Lisa , ate Vietnamese (as per usual) and followed it up by two big mugs of English Breakfast tea, which fit the bill perfectly as it's been rainy and overcast here - it also seems as if the peeps in the shopping centre have turned up the aircon in the bid to encourage shoppers to buy winter woollies, we were all marvelling at how chilly it was inside Indro today. I missed my training today, but I am not too concerned as I am teaching double RPM tomorrow morning with Bronwyn for our St Patrick's Day open weekend at the gym. After a day off and a good rest, I think I will be jumping out of my skin at the prospect of a double whacker. I've added in glutamine now which has been making a difference to energy levels and recovery as well - I went to the supplement shop and asked for the cheapest, nastiest glutamine that was on the shelf :)

I'm also really excited because I'm going to FILEX on the 17th April and sharing an apartment with Kerryn - Selina and Amanda will also be around and I'll get to do the new Les Mills releases at the Super Workshop on the Sunday...woohoo!!! It all started yesterday when I got an unexpected delivery in the mail from Kerryn - see above. I think that I must have been channelling some Dirty Diana vibes to her and I see that it was mailed well before "Supersets" week (which I'm looking forward to next week, girls - after all I have to take my own medicine!)
So I'm looking forward to having a little date with Di later on tonight with hubs before hiding the chocolate away from him until next time..thanks Kerryn, made my day!! We got talking about FILEX and I thought to myself "I really should go...", then there is a wall post from Selina on Facebook "you really should go.." and then Kerryn going as well and there it was the old "three signs that that's it, I must sign up!" scenario. It's only 4 weeks away and I am really looking forward to it.

Off to cook dinner, I feel some chicken and vegetables tonight..yum..yum!

Back to reality!

Back to reality after another amazing weekend of competition and catching up with lots of different people.

I forgot to mention that I had the opportunity to meet Amanda, who is a friend of Kek's and now a client on the weekend. We had Japanese in the Queen Street Mall which was great and had a good chat about blogging and biking and all things fitness on Saturday. I must apologize for being a bit of a poor date, because all of the moving around left me quite exhausted. I had been lucky enough to poke my head in at Fitness First and see John and Wanda and the excitement of the launches going on must have had a bit of an effect.

On Sunday I got to catch up with Debs at the WNBF show - Deb is looking great and I reckon she's got the best looking "girls" on the Gold Coast. The WNBF show was very friendly and the backstage assistance was fantastic.

Today, it's back into the swing of work and trying to get a little bit better everyday - I have improved markedly but have a long way to go still. I've been really bothered by swelling and hoping that at my appointment next week it has left the building and my surgeon doesn't take another needle to me. I changed my dressings for the first time today and my scar is amazing - even though it runs from hip to hip and initially looked like a shark had been having a go at me, it is slowly but surely fading into a thin pink line. The breast incisions are non existent. I would have to look really hard to see them!
